Porcini Mushroom and Chestnut Soup

Autumn is a season we deeply love here at OLIVI – Le Buche Winery.
The vineyards turn warm shades of red and gold, the harvest comes to a close, and the scent of must fills the cellar.
It’s the perfect time to rediscover the flavors of the woods and local traditions — like this Porcini Mushroom and Chestnut Soup, a dish that captures the most authentic side of Tuscany.



Ingredients
for 4 people


300 g fresh porcini mushrooms (or 30 g dried porcini, soaked)

200 g boiled and peeled chestnuts

1 medium potato

1 shallot

1 garlic clove

700 ml hot vegetable broth

Extra virgin olive oil

Salt and freshly ground black pepper

Fresh thyme or chopped parsley

(Optional: a dash of cream or a drizzle of truffle oil to finish)



Step-by-step preparation


Prepare the ingredients
Clean the porcini mushrooms with a damp cloth and slice them. Dice the potato and roughly chop the chestnuts, setting a few whole ones aside for garnish.

Build the aromatic base
In a large pot, gently sauté the chopped shallot and garlic clove in a drizzle of extra virgin olive oil.
When they become fragrant, add the mushrooms and let them cook for a few minutes, until they release their water.

Add chestnuts and potato
Add the chestnuts and diced potato, stir well, and cover with hot broth. Let it simmer on low heat for about 25–30 minutes, until the texture becomes soft and rich.

Make the soup
Blend part of the mixture with an immersion blender to create a creamy base, while leaving some mushroom and chestnut pieces whole for texture. Season to taste with salt and pepper.

Plate and serve
Ladle the soup into bowls, drizzle with extra virgin olive oil, garnish with fresh thyme leaves, and, if desired, finish with a splash of cream or truffle oil.
Serve with toasted bread or crostini.
