In the cellar we use barriques, tonneaux and barrels of the best qualities of French oak originating from different forests, constantly seeking for the perfect combination between wood and vine;
The percentage of new wood remains limited as we do not want that the oaky notes dominate the varietal characteristics of the grapes. Each variety is aged separately in the most appropriate format the Sangiovese and the Pugnitello in big barrels, the Syrah in tonneaux, the Merlot, the Cabernet and Petit Verdot in barriques for about 12 months.
The wines rest in the barrels accompanied by a constant soft sound of classical music, which is supposed to make more balanced and harmonious their development.
