Our freshly pressed Extra Virgin Olive Oil has unique characteristics, the whole process is handled within the farm, including the pressing carried out in the proprietary oil mill.

Harvesting by hand when the ripening is not completely completed gives the La Sovana / Le Buche oil a low acidity and a delicately spicy aftertaste, reflecting the significant amount of antioxidants and polyphenols contained.

Sovana has obtained the DOP certification from the Consortium for the protection of DOP Terre di Siena extra virgin olive oil.
